Chef's Philosophy:  I seek out the highest quality ingredients possible and only work with reputable vendors. Here in the countryside, this means that we either pick from our own garden or fruit orchard, or buy direct from local farms and producers - you can't get more fresh than that!  And what a remarkable difference this makes.  I prepare the maximum possible from scratch – to assure the freshest taste possible and to guarantee a high quality that meets my own strict standards.  My professional training is in classic Mediterranean cuisine and this is the foundation of my menus. I am also happy to prepare other styles (because I love them also!) – don't hesitate to ask
